As @chefgirl says, these are a buy in store item. For context, you can purchase at-home freeze dryers, but you would be out about $3000. If you're super into survival preparedness or making your own backpacking food, it might be worth the money. But if you just want some raspberries to make this tart, hit up your local Trader Joes.

I have used freeze dried raspberries in cookies, NYTIMES recipe. After processing them, strain out the seeds. You will need more, since the seeds are gone, but unless you like the seeds, this is better.

You buy them. Or better yet, buy them in powder form. They are readily available in dried fruit aisle and the powdered version is online.

This seems like it would be good without the crust served in ramekins or wine glasses, or with a chocolate or graham cracker crust instead of tart dough. There’s so much else going on and I’d want the lightness of a crunchier crust. Will try it. What a gorgeous recipe.

Even better than freeze-dried raspberries is the freeze-dried powder, which has had the seeds removed. Spice jungle.com has it, along with a lot of other freeze-dried powders, ready to use.

Freeze dried raspberry powder is also available at Nuts.com. I frequently bake with dried fruit powders because the powders add so much flavor to baked goods and icings without adding a lot of liquid. This is especially useful when you want strawberry flavor because strawberries are so watery that they often don't work well when you add them to baked goods.

You only need 20 g, not 8 oz. The bag from trader joe's is 34 g, so you'll need just over half a bag. They're typically $3-$5 per bag.

Agreed! Even if somebody *gave* me a freeze-drying machine, if I had fresh ripe raspberries, I would eat them, not dry them.

I’m in the process of making this right now, and I can agree that freeze dried raspberries would be a hassle. I’m going to use sumac powder instead. It’s got a nice tart flavor and adds some nice red accents to a dish.

30 gluten free Oreos worked for the tart but likely needed an egg white instead of just butter as they came out crumbly.Upped the filling with an extra half pint of raspberries and half cup of sugar, but forgot to add more egg, so it thickened nicely but didn't set, was still delicious, likely should have added an extra yolk and 1/2 a whole egg?The Meringue directions curdled so I made regular meringue (no cooking before on tart) and it was lovely and delicious.

Can you make this more chocolate forward by adding chocolate to the filling and increasing the cocoa in the meringue?

FYI Trader Joe's no longer carries freeze dried raspberries due to supply chain issues. I used freeze dried strawberries instead

I followed the recipe exactly, and this just didn’t work for me. Crust simply too thick, the berry filling seemed to disappear into the meringue, and the flavors too intense for many. I think that, as some have said, this recipe just is too complicated for the untrained home cook, of which I’m one.

My first instinct was to top the curd with a ganache, I was worried the meringue wouldn't be chocolaty enough. But it was so pretty, and I wanted to try the recipe first! I was right. Turned out perfectly, but the meringue was too sweet and not enough chocolate to complement the raspberry.

I’m a beginner. Spent way too many hours on this. Then of course forgot to put in very last ingredient, melted chocolate. I recovered by drizzling on top of meringue. Absolutely delicious but not sure it was worth the effort.

Meringue never made it to stiff peaks. More like marshmallow but still good. A very sweet recipe.

I made this for Valentine's Day dessert and it was fantastic. A lot of work and it took about 4 hours from start to finish, but worth every minute. I could not find freeze dried raspberries, so I used fresh, pureed them and let them sit out for a few hours to evaporate as much moisture as possible. I added the cocoa powder to the raspberries and carefully folded them in. Drizzled the melted chocolate across the meringue after it was baked for a wow presentation!

Changed to a chocolate wafer crust and added layer of oatmilk chocolate pudding under raspberry layer. I feel like there would be less waste and work to strain the cooked raspberry purée before adding to the eggs. It was so thick that it didn’t really strain well, so ended up with not very much raspberry filling. But result was tasty. Guests had seconds and wife liked more than expected.
