This Au Jus Recipe is short and sweet…

And, yes, there are Au Jus mix packets available at your local store but they aren’t nearly as delicious and usually contain a bunch of carbs.

🥘Ingredients:

  • ⅓ Cup Beef Fat Drippings * From Prime Rib or Roast Beef

Just scoop the fat drippings out of the pan that you used to roast your meat.

  • ¼ tsp xanthan gum * be careful with this ingredient. If you use too much it will come out like jello.

If you are of the mindset of “more is more” when cooking, try to ignore those instincts when cooking with Xanthan Gum.

Many people prefer to use a tablespoon of white flour in this sauce but it adds 1 net carb per serving.

Not a huge deal even if you’re a low carb eater. But if you’re gluten free, Xanthan Gum is your best bet for making a gluten free au jus mix.

This is a dairy free au jus mix but if none of the thickening ingredients are on hand, you can use 4oz of cream cheese.

  • 3 cups beef broth * or 3 cups water and 6 tsp beef bouillon.

I love bouillon because it’s so versatile.

1.) Pour all of the ingredients into a sauce pan and whisk until combined before turning on the heat.

2.) Turn on heat to Medium/High and continue whisking until simmering and slightly thickened and uniform (5-10 minutes).

This Au Jus sauce will not be thick like gravy. The xanthan gum is only used to help combine the fats and spices.

3.) Serve with your choice of meals. This is perfect with Prime Rib, French Dip or Roast Beef.
