How to Make Eggnog Safely

In order to make this safe to drink, the mixture with the eggs needs to be cooked.

This process is done very gradually with heated milk so that you don’t scramble the eggs.

Most people prefer cooked eggnog as opposed to raw because it provides a richer flavor.

How to make eggnog:

First, whisk together the egg yolks and the sugar until this mixture is light and creamy.

Second, get out a saucepan and turn the stove to medium heat. Add the heavy cream, milk and cinnamon.

Then stir all of this together and heat until the mixture reaches a simmer.Don’t let it boil!

You will need to watch it closely and don’t walk away from the stove.

Now, gradually add the hot milk to the egg mixture. It is really important that you do this gradually so you don’t scramble the eggs.

I normally do a spoonful at a time and whisk after each spoonful is added.

Continue to follow this process until all the milk has been added to the egg mixture.

After all of the milk has been added, pour the mixture back into the saucepan on the stove.

Then heat on medium low heat and continue to whisk until the mixture is slightly thickened. Keep in mind that it will thicken some more as it cools.

Just remove from the heat and add the vanilla extract.Place the eggnog in the refrigerator until it has chilled and thickened.

This is optional but I like to serve it with homemade whipped cream and a sprinkle of cinnamon on top.

How to store:

Put the eggnog in an air tight container in the refrigerator for up to 1 week. This is such a time saver around the holidays and I love to make it in advance.

It saves time so you can do other things that need to be completed on the holiday or day of the party.

FAQs

What are the ingredients in eggnog? ›

A traditional holiday drink dating back hundreds of years, eggnog is made with eggs (hence the name), milk, cream, spices like nutmeg and vanilla, and fortified with rum, whisky, and/or brandy.

What makes eggnog unhealthy? ›

Traditionally made with eggs, cream, milk, and sugar, no one would say that eggnog is a healthy drink. Even a small serving can pack significant amounts of calories, fat, saturated fat, and added sugars. And then there's the fact that homemade eggnog made with raw eggs can be a food-poisoning risk.

What is the very best alcohol to put in eggnog? ›

While brandy is the most traditional alcohol to pair with eggnog, according to traditional recipes, you can also use a mixture of dark rum and Cognac. If you like your eggnog with more of a kick you can also add bourbon, but we recommend sticking to rum and Cognac to preserve the 'nog's flavors.

How to make eggs safe for eggnog? ›

Eggs must be cooked to 160 degrees F to kill bacteria such as Salmonella that may be present. If your eggnog recipe calls for raw eggs, it may not be safe. Adding alcohol inhibits bacterial growth, but it cannot be relied upon to kill bacteria.

How long does homemade eggnog last? ›

Cover and refrigerate.

The more liquor you add, the longer it will keep — non-alcoholic eggnog should be consumed within 1 day; eggnog with 1/2 to 1 cup of liquor will keep for several days; and eggnog with 1 1/2 cups of liquor will keep for several weeks and continue aging and thickening quite nicely.

What gives egg nog its flavor? ›

Eggnog is traditionally made with eggs, egg yolk, sugar, milk, heavy cream and vanilla extract. It's often spiked with brandy, rum or other liquor, and topped with freshly grated nutmeg and/or cinnamon sticks.

Why do people put liquor in eggnog? ›

"Milk, eggs, and sherry were foods of the wealthy, so eggnog was often used in toasts to prosperity and good health." Those who could afford milk and eggs and costly spirits mixed the eggnog with brandy, Madeira wine or sherry to make a drink similar to modern alcoholic eggnog.

What do you call eggnog with alcohol? ›

Rumchata Eggnog is an alcoholic beverage made with eggnog and RumChata® served in a glass with a cinnamon-sugar rim. It's the perfect co*cktail to serve at your Christmas and New Year's Eve parties! And, I even have copycat Rumchata and homemade eggnog you can use in the drink.

What drink is similar to eggnog? ›

Typically made around Christmastime, the Tom and Jerry is a classic co*cktail that looks and tastes a lot like eggnog. Its exact origins are unclear, but there's evidence to suggest that the Cognac and rum-spiked drink's roots date back to England in the 19th century.

Does the alcohol cook the eggs in eggnog? ›

No. According to the University of Minnesota Extension, "eggs must be cooked to 160 degrees F to kill Salmonella that may be present. Adding alcohol inhibits bacterial growth, but it cannot be relied upon to kill it completely." However, if you use pasteurized eggs, no further cooking is necessary.

What can I substitute for eggnog? ›

If you are really looking to knock out some calories, consider purchasing soy nog or rice nog. These alternatives to regular eggnog contain less fat and nearly half the calories of regular store-bought eggnog. Vanilla chai tea is also a great holiday alternative for those with non-dairy diets.

Should I pasteurize eggs for eggnog? ›

Adding alcohol will inhibit bacterial growth, but it cannot be relied upon to kill bacteria. Once alcohol is diluted, it no longer effectively kills bacteria. You will still need to use pasteurized eggs. Keep in mind that simmering eggnog over heat will remove the alcohol.

Has eggnog always had alcohol? ›

Eggnog is thought to have been created in the thirteenth century by European medieval monks who prepared it as a warm ale beverage containing figs and eggs known as "posset." By the seventeenth century, the beverage was made using milk, eggs, and booze, all of which were expensive ingredients during that time.

What is store bought egg nog made of? ›

What Is Eggnog Made Of? Today, eggnog is usually made of some combination of eggs (either just the yolks or the yolks and the whipped egg whites), sugar, milk, cream, nutmeg, and sometimes booze. We're all familiar with the cartons of store-bought eggnog that grace supermarkets every December.

Does all eggnog have eggs in it? ›

At its core, eggnog is an emulsion of milk and/or cream, sugar, and, yes, eggs. Unlike in an egg cream—a similar old-timey drink that actually gets its name from the foamy, whipped egg white-like texture achieved by mixing seltzer and dairy fat—the “egg” in eggnog is very, very real.

What are the ingredients in favorite day eggnog? ›

Ingredients: milk, sugar, cream, skim milk, whey, egg yolks, guar gum, natural and artificial flavor, carrageenan, spices, salt, gelatin, annatto-turmeric color.
