I’ll admit it: I’ve gone out of my way to make pizza for breakfast an acceptable meal. And I am not ashamed. Sometimes, leftovers from a late-night pizza run are all you have in the fridge Sunday morning. Sometimes, you don’t want to spend more than 5 minutes prepping your weekend brunch, so you pull out a frozen pizza and put an egg on it. Other times, you KNOW you’re a savory breakfast person, plan ahead, and buy pizza making ingredients to go with your eggs. Again, no shame. In fact, I celebrate the breakfast pizza! Breakfast Pizza Method 1: Use Your Leftovers
Ingredients:
- Olive oil or cooking spray
- Leftover pizza (however much you’ve got)
- 1 or 2 eggs (depending on how much leftover pizza you’ve got)
Estim. Prep & Cook Time: About 10-12 mins
Steps:
- You wake up, and you’re starving. But you remember that on your way home from the bars (or any other late night activity of choice), you stopped for pizza – AND – you have leftovers! As long as you have at least one slice, you can turn this pizza into brunch.
- Use a shot glass or a small cup to cut a small hole out of your leftover pizza. If you only have one slice, use one egg. If you have multiple slices that are still partially attached, you can cut out multiple holes for multiple eggs. I usually only add 2 eggs total.
- Find a pan or skillet that your leftover pizza will fit in. Grease the pan with a little olive oil or cooking spray and heat on medium-low.
- Place your leftover pizza (now with a hole(s) in it for the eggs) in the pan.
- Carefully crack an egg into each hole in the pizza. Increase heat to medium. After a minute or so, cover the pan with a lid.
- Let cook for about 10 minutes, or until the egg whites are set, but the yolk still wiggles a little when you gently move the pan.
- When the egg(s) are cooked to your liking, remove from heat. The bottom of the pizza will be a little crispy, but the top should be nice, warm and gooey.
- Season the eggs – I typically use salt or a Tuscan spice mix.

Breakfast Pizza Method 2: Use Frozen Pizza
Ingredients:
- 1 personal-sized frozen pizza (if using a large pizza, double the eggs!)
- Note: I love pizzas byEat Pizza, a startup in Washington, D.C. that makes organic frozen pizzas that actually taste amazing.
- 2 eggs
Estim. Prep & Cook Time: About 10-20 mins (depends on frozen pizza cook time)
Steps:
- Preheat oven according to the instructions for your frozen pizza.
- Remove the pizza from its packaging. If possible, use a large spoon to create 2 indentations in the frozen pizza, where your eggs will go. This is not an essential step, but will help prevent the egg whites from sliding around later.
- Crack an egg into each indentation you made. If you weren’t able to indent the frozen pizza much, just crack the eggs in wherever you’d like. If you’re using a thin crust pizza, try to keep the eggs toward the middle of the pizza. Larger crusts, like Eat Pizza’s, do a better job of containing the egg whites.
- Some frozen pizza instructions tell you to bake the pizza directly on the rack in your oven, while others call for a baking sheet. Follow your pizza’s instructions, and put it in the oven.
- Set baking time according to your pizza’s instructions. If your pizza takes longer than 10 minutes to cook, check on the eggs every few minutes to make sure they don’t overcook. You want the egg whites to be set, but the yolk to still wiggle a little, which takes about 10 minutes at 450 degrees F, but can take longer at lower temperatures.
- When both the eggs and pizza are cooked to your liking (based on pizza instructions), remove from heat and let cool.
- Season the eggs – I typically use salt or a Tuscan spice mix.

Breakfast Pizza Method 3: Buy Pizza Ingredients Ahead of Time
Ingredients:
- 1 pizza crust
- 1 small jar of pizza sauce
- Your choice of cheese (go with mozzarella for a traditional margherita pizza)
- Either shredded cheese or a ball of fresh mozzarella will work. You can even find small mozzarella balls that are easy to spread into small flat pieces.
- Optional toppings such as tomatoes (sliced), basil leaves or pepperoni slices
- 2 eggs
Estim. Prep & Cook Time: About 20 mins.
Steps:
- Preheat oven according to the instructions for your pizza crust and grease a baking sheet with cooking spray.
- Place the pizza crust on the baking sheet.
- Use a ladle to scoop some pizza sauce onto the crust and spread it around. Repeat until covered.
- If using shredded cheese, sprinkle a healthy layer on top of the sauce. If using fresh mozzarella, cut into small, round pieces (about 2 inches in diameter) and place an even amount around the pizza.
- Place sliced tomatoes, pepperoni slices, and or basil leaves evenly around the pizza.
- Use the back of a large spoon to make 2 indentations in the pizza (not too close to the outer edge) for the eggs. This will prevent the egg whites from slipping around.
- Crack an egg into each indentation and season – I typically use salt or a Tuscan spice mix.
- Bake according to the time instructions for your pizza crust.If your pizza takes longer than 10 minutes to cook, check on the eggs every few minutes to make sure they don’t overcook. You want the egg whites to be set, but the yolk to still wiggle a little, which takes about 10 minutes at 450 degrees F, but can take longer at lower temperatures.
- When the eggs are cooked to your liking and the pizza is fully cooked (when the cheese has melted), remove from heat and let cool.
