Fruit purees are an excellent component for creating sweet and savory dishes. As a simple embellishment or as the star, they pack tremendous flavor and can dramatically change your cooking and baking. For the most part, they could not be simpler to prepare.

I tend to cook down the fruit first, on the stove top or in the oven. A few minutes on the stove top, or a half hour in the oven, is all it takes. The fruit becomes tender and the juices release. I might add a touch of powdered sugar, if the fruit is naturally a bit bitter, or some fresh citrus juice or zest to brighten flavors.

Once the berries have broken down they are processed in a food processor or blended in a blender and strained, if desired, to create a very smooth liquid. The puree can be returned to the stove top to simmer further and thicken, if desired.

Ingredients

  • 450 grams fresh cherries (16 ounces OR 1 pound), pitted and roughly chopped
  • 3 grams fresh lemon zest (1 teaspoon)
  • 15 grams fresh lemon juice (1 tablespoon)

Instructions

  • Add cherry pieces, fresh lemon zest, and fresh lemon juice to small saucepan.

  • Heat cherries over medium low heat for 5 to 10 minutes, or until juices begin to release and cherries soften.

  • Remove saucepan from heat and cool slightly. Rinse saucepan. Add cherries to food processor. Process until smooth. Strain cherries back into saucepan. Heat over low heat for a few minutes to cook off a bit more moisture.

  • Store cherry puree in an airtight container for up to a week.
