In general, tomatoes that have lower sugar are more acidic tasting and are usually heirlooms. The ones I recommend are Beefsteak, Druzba, Hard Rock, Nyagous, Old Brooks, Rutgers Select, Purple Calabash, Silvery Fir Tree, and White Potato Leaf.
