Salsa verde—Spanish for "green sauce"—is a Mexican salsa that typically includes tomatillos, green chiles, and cilantro that have been chopped and simmered into a sauce (as opposed to some salsas that are made from raw vegetables). The term salsa verde can also be used to describe an Italian green sauce, such as gremolata, that typically includes green herbs as its primary ingredient. When we call for purchased salsa verde in a recipe, we are referring to the Mexican version. <link></link>Tomatillos—a fruit that resembles a small green tomato, but with a papery husk—are the key ingredient of salsa verde. Tomatillos give salsa verde its characteristic green color and tangy flavor.

Salsa verde can range in spiciness from mild to hot; it can also range in consistency from smooth to chunky. You can find salsa verde at most supermarkets; one of the Bon Appétit Test Kitchen's favorite brands is Herdez. Green taco sauce is not the same as salsa verde, as it typically also includes green tomatoes in its ingredients.

Salsa verde is a great dip for tortilla chips, topping for tacos or burritos, or sauce for roasted pork.
