Beer Cheese Dip Board — Mer and Meg's Escapades (1)

Dipper Ideas:

  • Crusty bread, soft pretzels, bread sticks, or garlic knots

  • Apples or pears

  • Tortilla chips, croutons, or hard pretzels

  • Peppers, celery, carrots, broccoli, cauliflower, roasted potatoes, or fries

  • Pepperoni, steak bites, salami, sausage links, or meatballs

Use whatever you have on hand and like the best. There’s no set rules for your board, just have fun with it!

*Try to serve the beer cheese in a small slow cooker or fondue pot to keep the cheese melted / warmed the whole time. Once the cheese starts to cool it will become clumpy and harder. You can also rewarm the cheese slowly to melt the cheese sauce again.

Beer Cheese Dip

*This is an adapted version of Pioneer Woman’s Beer Cheese Dip

Ingredients

  • 1/4 cup unsalted butter

  • 1/4 cup all-purpose flour

  • 1/2 tsp garlic powder

  • 1/2 tsp onion salt

  • 1/8 tsp smoked paprika

  • 12 oz. IPA beer

  • 1/4 cup half-and-half

  • 8 oz. shredded fontina cheese

  • 8 oz. shredded mild yellow cheddar cheese or sharp yellow cheddar cheese

  • 1 tsp. dijon mustard

Instructions

  • In a medium saucepan on low to medium heat melt the butter. Slowly add in the flour and continuously whisk for about a minute or until flour is lightly browned

  • Slowly pour beer into the saucepan while whisking. Once beer reduces a little add in half and half. Continue whisking constantly until the sauce begins to slightly bubble and thicken, about 5 to 7 minutes. Reduce heat to low and add in the cheeses. Constantly whisk until all cheese is mixed together and melted into the sauce. Remove saucepan from the heat and whisk in dijon mustard.

  • Serve in a small crock pot on low or a fondue pot. Place on a board and add dippers around the pot. If you are serving cheese dip in a stoneware bowl with no form of added heat, then serve right away before cheese begins to cool. Slowly reheat cheese dip as needed

This citrus sangria is a crowd pleaser! It has a light and bright flavor from the citrus fruit that makes it so refreshing and tasty. It’s the perfect balance of tart from the grapefruit and a hint of sweet from the orange. Although citrus fruit is often found in summertime drinks, I always like to serve them during the winter holidays too! Especially since we could all use an extra dose of vitamin C during that time.

This hot white chocolate is flavored with either peppermint vodka for an alcoholic version or peppermint extract for a non-alcoholic version, is super creamy and topped with whipped cream, crushed candy canes, and mini marshmallows. It’s a great seasonal drink that’s so easy to make and perfect to cozy up with by the fireplace!

This apple cider pomegranate margarita is the perfect drink for nights by the bon fire, parties, Halloween, Thanksgiving…all the fall events! It’s also a great way to use fresh apple cider and apples from a local orchard. Double or triple this recipe and make a large pitcher for your next gathering!
