Good Morning! I have another yummy recipe that Aunt Jay made for y’all! We used to make this all the time years ago, and I had forgotten about it! It is made in the oven but the unique flavor definitely reminds me of Spring! She served hers with Mashed Potatoes and Southern Style Green Beans. Winner Winner Pork Tenderloin Dinner!
Island Pork Tenderloin (Adapted from Gourmet Cookbook)
Ingredients
Spice Rub:
2 tsp salt
½ tsp pepper
1 tsp cumin
1 tsp chili powder
1 tsp cinnamon
2 pork tenderloins (about 2 – 2 1/2 lbs)
2 tbsp olive oil
Glaze:
¾ cup packed dark brown sugar
2 Tbsp finely chopped garlic
1 Tbsp Tabasco
Directions
Stir the spice rub ingredients together in a small bowl and rub all over the pork. Heat oil in ovenproof 12-inch heavy skillet or Dutch Oven over medium high heat. Brown pork, turning occasionally, about 4-5 minutes total. Remove from heat, but leave pork in skillet.
Stir together brown sugar, garlic and Tabasco in a small bowl. Pat the mixture on top of the pork. Place skillet in the oven at 350. Roast until thermometer inserted diagonally into the center of each tenderloin registers 140 degrees, about 20 minutes. Let pork stand in skillet, loosely covered with foil for 10 minutes.

Pork tenderloin takes on many flavors. I love your Island Pork Tenderloin recipe. So easy and delicious, I would put this on the grill while the weather is still warm.

I can't do Tabasco because I get heartburn easily is there a substitution for Tabasco that will not give me heart burn

When I buy tenderloins at my store, they come 2 in each package. It looks like 1 large tenderloin, but when you open it up, it is actually 2.
