Nippattu Recipe | Karnataka Style Crispy Spicy Nippat with detailed photo and video recipe. An extremely simple and popular deep-fried snack recipe from the famous South Indian cuisine. It is basically a flat disc-like chakli or murukku recipe with much less effort and no specific requirement for a chakli shape or spikes. It is a favourite tea-time snack for most South Indians if not served as a side dish to lunch or dinner with dal rice or rasam rice.

Nippattu Recipe | Karnataka Style Crispy Spicy Nippat with step-by-step photo and video recipe. South Indian cuisine has to offer many deep-fried snacks which are typically prepared for festivals or celebrations. Generally, these are prepared with complex or complicated ingredients and instruments which may be overwhelming for most of us. Yet there are many simple and easy deep-fried snack recipes and nippattu recipe or commonly known as nippat is one such simple snack.

I have always been a huge fan of simple snacks and I make such snacks frequently and store it in an air-tight container. Whenever we think of South Indian deep-fried snacks, we either end up with chakli, murukku or bajji recipes. However, we ignore some simple snacks like nippat or kodubale which do not require any complicated instruments and can be prepared with just baking or plastic wrap. In other words, we just have to shape it with the same chakli or murukku dough like a disc and deep fry it. As a matter of fact, whenever I prepare any type of chakli or murukku, I make sure to prepare these as an additional snack. Firstly, the dough I prepared for this has additional ingredients like roasted peanuts and roasted channa dal. This helps to make the snack more exciting and interesting. However, we do not add these for murukku as it may get stuck in chakli mould. Secondly, you can use your hand or a bowl to shape these snacks. I personally recommend using your hand to shape it with the help of plastic wrap or baking paper. Lastly, to get a crisp and crunchy snack, deep fry these in a low to medium flame. This can be tiring but there is no other shortcut for a crisp snack.

Ingredients

  • ½ cup peanuts, roasted
  • ½ cup roasted gram dal / putani
  • 2 cup rice flour, fine
  • ½ cup maida
  • ¼ cup rava / semolina / suji, fine
  • 1 tbsp chilli powder
  • 2 tbsp sesame
  • 1 tsp cumin
  • few curry leaves, chopped
  • pinch hing
  • 1 tsp salt
  • 3 tbsp hot oil
  • water, for kneading
  • oil, for frying

Instructions

  • firstly, in a mixer jar take½ cup peanuts,½ cup roasted gram dal.

  • pulse and crush to a coarse powder.

  • transfer the peanut putani powder to a large bowl.

  • add2 cup rice flour,½ cup maida, and ¼ cup rava.

  • also add1 tbsp chilli powder, 2 tbsp sesame, 1 tsp cumin, few curry leaves, pinch hing, and 1 tsp salt.

  • mix well making sure everything is well combined.

  • further, pour 3 tbsp hot oil and mix gently.

  • crumble and mix well making sure the flour is moist.

  • now add water as required and start to knead the dough.

  • knead to a smooth and nonsticky dough.

  • pinch a small ball-sized dough and smoothen

  • press and flatten by placing it in between the zip lock bag.

  • press uniformly to have slightly thick thickness.

  • deep fry in medium hot oil, keeping the flame on low.

  • stir occasionally, and fry on both sides.

  • fry until the nippatu turns golden brown and crispy.

  • drain off to remove excess oil.

  • finally, enjoy Nippatu for a month when stored in an airtight container.

Notes:

  • firstly, make sure to add water in add batches while kneading the dough. if the dough is too tight, nippatu will turn hard, and if it is too soft then it will absorb oil.
  • also, increase the amount of chilli powder to make it spicy and masaledar.
  • additionally, fry on low flame else it will not be crispy from the inside.
  • finally, Nippatu recipe tastes great when served with evening tea.
