02/6Cauliflower curry

First heat oil in a pan. Add cumin seeds and let them crackle. Then add chopped onions, add crushed ginger-garlic and saute until they're translucent. Now add turmeric powder, Kashmiri red chilli powder, coriander powder - on low flame, mix the spices. Put in chopped tomatoes and 1 green chili. Mix them well and begin to saute them on a low to medium-low flame. Add the chopped cauliflower florets and blend it well with the masala. Add salt to taste. To prepare the curry add 1 cup water. Cover the pan with a lid and cook the cauliflower curry on a low to medium-low flame. Once the cauliflower is tender and cooked through, add some fenugreek leaves and garam masala and mix. Garnish with some coriander leaves and serve hot.

Heat oil in a pan. Add some sliced onions and saute. Then add some chopped garlic. Add in the cauliflower florets and cook for 2 to 3 minutes. Next, add some cashew nut paste, mix them together and cover the pan with a lid. Cook on medium flame. Once done, leave it aside to cool. Put the mixture in a blender and add in some slices of bread. Marinate the cauliflower floret in the masala. Use barbecue skewers to pierce the gobhi, and cook on the tandoor. Brush it up with some oil and cook for 2-3 minutes. Sprinkle some chaat masala and lemon juice on top.

Heat oil in tava, add the cauliflower florets and salt to taste and saute on medium flame for 2 minutes. Cover the tava with a lid and let it cook for 8 minutes on low flame. Pour in very little water and cover with a lid again. Let it cook on low flame for 2-3 minutes. Keep tossing in between. Turn off the fame, add garlic powder, salt and pepper. Serve the dish.
